Weekend highlights

Afternoon to ya’ll!

I hope everyone’s weekends were splendid. Mine just about went by in a flash and before I knew it I was back to work, this morning.

I was hoping so badly to go run outside before starting my day but the wind was crazy. I’m talking howling crazy! So instead I resorted to the gym. I got in 35 minutes of cardio on the elliptical and a good tabata workout with the trusty NTC app:

  

  

Going back in time a little bit, this weekend was so very relaxed which I totally enjoyed. The weather was sunny and we took advantage of it completely.

Here are some highlights:

 Sangria outback

(forgive me for my nails, eek!)

 

Warm weather calls for obbligatory sangria (in my world!) My favourite go-to recipe when I have little on hand is this one:

Mix 4 oz. vodka of choice, 2 cups of white penguin wine (or white of your choice), 2 cups of club soda mix, squeezed lemon and frozen mango fruit mix

As you can see, it’s so generic and that’s the beauty of sangria! You can make it in any way you like 🙂

They love the sun even more than I do!! If they could just bask in the sunlight all day, they would be all over it.

Is there anything better? Maybe.  But this is one of my most beloved activities! Especially when getting to explore some new spots. Check it out- is that ice breaking up?? YAY

Colt snapped this picture when we all somehow managed to squish on our little couch together. This picture does not justify how hilarious it was, especially since Tanner (who is barely in the picture) is SO, so big and was trying so hard to be a part of it!

Weekend highlights

Tomorrow I’ll be heading back to work after the long weekend, it has been a much needed amount of time off, but for now I will enjoy what’s left of this night before heading to bed.

I’ll share with you some of my favourite moments of this weekend!

Beauty and the Beast play

For Christmas Colt had gotten us tickets to see the traveling Broadway play beauty and the beast, needless to say I was beyond excited! It made for a nice reason to travel to Edmonton together and get a little dressed up. And since I’m an absolute Disney fanatic, it pretty much summed up a dream date for me!


The play itself was so entertaining and I enjoyed how they mixed in some good humour. The dancing, acting and singing were so well performed and they had some great effects mixed in! My favourite song of the evening was ‘be our guest’ where they shot confetti out into the crowd!

Visiting my sister to bead

Since we were going to be in Edmonton for 2 days, I had to make sure I made some time to see my sister! We got a little crafty and sag down together, had a glass of wine, and make some beading bracelets just as a little activity to chat over. It’s so fun every time we catch up with each other!

David’s tea purchases

I gotta say, I don’t often go to the malls on weekends because they are soooo hectic – the parking lots, stores and lineups always seem to have me waiting for ridiculous amounts of time! But this weekend it was unavoidable as I had a list of things I was desperately needing to purchase. I ended up passing David’s tea while I was in there, and it didn’t look too crazy, so I opted to check it out and see if any teas caught my senses!

I happily left David’s tea with a couple of yummy smelling purchases and teas I am in love with! I am addicted to sweeter dessert teas, so when I saw birthday cake and smelt it I just had to purchase some! So thankful I did because it is absolutely delectable and will surely be the thing I need at night time to meet my sweet tooth needs! And how cute is it that it actually has sprinkles in it?

On Sunday night, when we returned home, colt and I were looking to make a delicious and romantic meal together at home. Immediately we thought if lobster tAils because they’ve always been a favourite and are so savoury but also sweet and delicious. We roasted them in the oven and paired it with some home made bruschetta on a French loaf and asparagus simmered in balsamic! With a glass of wine, this has been my most favourite meal that I have had in a significantly long time. So so good!

Fitness:

I’ve managed to keep on track this weekend despite all the bouncing around! I woke up early on Saturday morning and put 6 miles in, practicing some splits and getting ready to get back into official training mode soon enough! Gosh I cannot wait for that day to come again. I NEED the goal to keep my motivation!

Then yesterday I did about a half hour cardio, trying not to keep track of the clock and just base it around how I felt. I did manage to push myself! I notice that sometimes when I base it around a distance, I might take a little longer and just keep to a steady pace easy cardio which isn’t the best for improvements but good for endurance.

Sweaty circuit workout

Happy Monday ya’ll! I hope everyone is ready for another week and enjoyed their weekend and the Super Bowl, I sure did! LOTS of great food was indulged upon. A few friends and Colt and I got together for a Sunday football potluck  – booze, football, great food and games made it a wonderful day with wonderful company. 🙂

On another note

I’ve been really doing a lot of research and looking into a lot of different types of workouts that magazines, websites and blogs have to offer. I’ve tried a few out, and definitely picked out some favourites. I’ve learned and noticed that one type of workout that I really enjoy are circuits!

Circuits are so great because you get the best of both worlds  -aerobic and anaerobic – into one compacted workout that gets your HR UP! (So long as you put some good effort into it).

Before heading to the gym today, I  knew I wanted a really good sweat session because I feel like I’ve been at a bit of a plateau and haven’t pushed myself as hard as I could have lately. So, I opted for this super fast and sweaty circuit workout posted on yet again the pbfingers blog!

I started off with  a 15 minute treadmill warmup, then I went through the work out moves once, went back to the treadmill for 10 minutes, went through the workout another time, did 10 minutes on the treadmill, then finished up with a final go through of the moves. I finished my gym session with an easy 5 minutes of cardio on the elliptical.

I felt so refreshed and recharged afterward. Definitely a great kick off to my Monday (and slightly in part due to the mass amounts of food that I consumed at the SUPERBOWL).

Weekend festivities and lemon baked salmon

This weekend has been COLD to say the very least up here in Canada. In Alberta this weekend, we’ve received a few cm of snow already and it’s looking like a winter wonderland outside!

Yup, that’s me looking outside of my front window. We had expected soooome snow, but definitely not this much! Yesterday the fall was pretty crazy so our drive to Edmonton was postponed.

We will be heading out shortly today and hitting up west Edmonton mall, the Indiana Jones exhibit (weeee!) and then my sisters for dinner. 🙂 I’ll keep you updated on all that!

If you’ve been following my blog much, you’ve probably gotten a bit of understanding of my love of fish and seafood. YUM. and since living with colt, I haven’t been eating it as much as i used to. But last night we decided on my Classic lemony basil basa fillets with a side of mashed sweet potato and it was deee-licious! Colt loved it too!

It’s a simple recipe I thought I would share.

Ingredients

Bass fillet
Oil
Basil
Paprika
Lemon cut into slices
Salt and pepper

Directions

Preheat oven to 375 Celsius
Lay fillets onto greased baking sheet and season them with squeezed lemon, salt and pepper, generous amount of basil and just a dash of paprika
Place lemon slices on top of fillets and cover with aluminum foil
Place baking sheet with fillets into heated oven for 12-15 minutes, depending on the size of fillets
Then serve with lemon as garnish!

The presentation makes these bad boys seem so much fancier than they really are, which I like 🙂

Things I’m Loving Monday 11

It was a fun-filled weekend with friends! I got a chance to get out and be active with colt and went on an adventurous hike at a nearby mountain called Flat Top. We also got to see a pretty awesome show on Saturday night with a few of our friends called ‘Dueling Piano’!!

It was a show where you can request ANY song you’d like and they play it off-hand! It was some pretty impressive talent they showed and made for some great evening entertainment.
Sunday was a designated lazy day. The weather was crazy here – it SNOWED!!!!!!!! So we spent majority of the day cooped up inside and watching Halloween movies in preparation for this week (so excited!)

I’ve been sticking with the Jamie Eason program pretty darn well the last 4 weeks, but today I felt like I wanted to switch it up. It was supposed to be a ‘leg day’ but I opted for a strength/circuit regime from PBFingers !

I purchased these things for diiiiirt cheap – 7 bucks!!! From Forever 21. They actually feel so nice and I’ve been wanting a pair of tribal or patterned leggings for a while. I like the fact that they are black and white because they’ll go with many different colours and outfits.

On Sunday Colt and I watched a series of old Goosebumps episodes and were lazy to the max. These shows honestly scared me sooo much as a kid! Now watching them I find them hilariously corny. We definitely got a good laugh out of the ones we watched.

Working in a school has many perks – including fun holiday themed crafts! There will be many more to come this week. Last week we made mummy mason jars and decorated our door sppooookkyy! Check it out!

Updates and weekend motivation

Hey friends!

It’s been another long week at work and I haven’t had the time I would have hoped to keep the blog updated.

Myself and my wellness team were hard at work with one of the elementary schools we work in and had a fun filled SUPERHERO health theme! It was so awesome and fun for the kids.

I also got to go and make real homemade pizzas with the local outreach school students. They were so thrilled and were stuffed to the max afterwards!

This week also called for a hike to a new found lake in our area of Northern Alberta. The lake itself didn’t even have a sign identifying it’s name or anything. So Colt and I pretended it was our own little lake and called it just that – Little Lake. 🙂

But I’m also here now and ready to chat with you about MOTIVATION.

So here’s the scenario… You’ve worked hard alllll week long. You’ve kept up with your workout regimes and strictly adhered to your diet. It’s fairly easy during the week, especially if you’re working a 9-5 job. But then, Saturday and Sunday roll around and all you’re looking to do is either chill out or make time for friends.

But you know that if you keep up with your fitness and health – whether it’s a walk, bike, anything to get moving – you will burn some calories and feel so much better than slugging around!

I’m sure most of us can relate to this feeling. I know I sure can.

But I’ve come up with some of my own ways to try to keep myself motivated on the weekends and ensure I don’t throw a wrench in all of the hard work I’ve put in during the week! (I know I don’t want to be getting up at 5:30 am for no good reason!)

Lay out my gear the night before

If it’s Friday night or Saturday night and I want to get a sweat session on in the morning, I will lay out the things I’ll be needing so it’s RIGHT in front of my face. Can’t ignore that.

Set my alarm using an upbeat tune

If my alarm sets off a tune that gets me pumped up and in a good mood then I am much more likely to get my body moving! And if you still don’t make it to the gym or outside then at least you get some good dance moves in. 😉

Set a date

This is probably the best one for me. If I set a date with my boyfriend, friend, or family members then there is very little chance I will be skipping out. It’s tough to bail on the people you love!

Plan to try something new

Sign up for that class you’ve been thinking about at your gym! Or if you’re into running, try going to the lane swim. Or take a look at what your community has to offer! There’s so many cool ways to get in shape these days – barre, zumba, yoga, rock climbing, the possibilities are endless!

Think about the goals you have for yourself

Remind yourself of the person you want to be and the level of fitness you want to achieve. Not to mention the positive endorphins you’ll be feeling afterwards.

Let the weekend begin

Hey friends, it’s been a great couple of days! Last night was my friend Conor’s birthday. It was a fun time! We celebrated with about 10 of us at boston pizza. The restaurant is a great socializing spot but I’m not the biggest fan of their food, I opted for a simple chicken flat bread which I packed half of it up for my lunch today! 🙂 I try to do this always when going out for dinner – cost effective AND healthier!

IMG_3980.JPG And today has been a productive day at work where I got the chance to work with some special kids all day and teach them the importance of being active! Wow I love my job. however TGIF!!! 🙂

Great start to the weekend!

I’ve finally pretty much overcome my cold and stuffiness that I’ve been experiencing this past week. Which made for a very long week at work to say the least. I don’t think it helped much that I also had a lot of presentations to do for a number of health and social classes in the high school!

Talking non-stop + sore throat = not great/one manly sounding Jamie!

But luckily, yesterday after work I got a fabulous bicep and back workout in AND managed a great 5 mile run. I managed to reach over 8 km in 40 minutes which is an amazing time for me! Not  too bad, not too bad 🙂

I’m here to post my faaaabulous bi and back work out for you all to have a try with:

Clearly the weights I used are not specified, it’s meant to tailor to whatever level you are at right now. However, I typically use 10 pound free weights for myself and between 20-40 pounds when using the machines. I ain’t the strongest gal in the world (yet) but I’m working on it!

After the gym and shower, I headed home and quickly whipped up a little something to eat before heading to my friends place. For dinner was a spinach and arugula salad with roasted mushroom, tomato and brown rice in a Thai dressing.

Then it was time for a night out (in!) with some great friends. We stayed in with drinks and played some hilarious board games. I brought Tanner with me and he was reunited with his best doggy friend that he hasn’t seen in a while!

The nights that I spend IN with my friends are usually my favourite. You reallyyy come to appreciate each other’s company a lot more.

My absolute favourite game that we played was one that I’m totally excited to share with you guys.. It’s called QUELF!

I had never heard of this game before last night and am soo happy they introduced it to me!!

It gives a whole new meaning to the word RANDOM. It’s filled with hilarious trivia, ridiculous stunts you have to do (for example I had to go 3 rounds using NO hands whatsoever, others had to mime, rap a crazy poem, etc), other outrageous rules, costume creations, and other nutty stunts like balancing acts and turning yourself into a toilet paper mummy!! I seriously recommend this game to everyone and it will guarantee you a night full of laughs!

Today I’m shortly heading to the gym and then going out to culture days festival in town! Can’t wait!

Things I’m Loving “Monday” 4 (Tuesday)

Hey all!

It’s been a hectic past few days and weekend, so I didn’t have time to post my things I’m loving segment yesterday, but here it is!

First of all a recap of my last few days – it was a gorgeous weekend with amazing weather! I got a chance to go to the beach, hang out with friends, family biking, and had new pet visits with my friends brand new kittens (so cute!) Yesterday was a crazy looooong day at work. Meetings after meetings pretty much, and my sickness (talkin’ an elephant standing on my head) did not help whatsoever. Then my night consisted of lesson plans for my wellness programming in the school board. WOW! But not I am feeling a bit more organized and relieved.

I can also take this time to share with you my favourite workout of the weekend! 6x6Workout_thumb

This is again thanks to the wonderful PBFINGERS blog! If you take a look under her workouts tab there are plenty of routines that are good to give a try. I like this one because you can challenge yourself and get what you put into it. The hardest part for me was actually the push ups, I need to work on those!

  • Catching up with old friends and laughing your toosh off

Who doesn’t love this?? By random chance, my elementary school best friend messaged me on Facebook and it turned into a conversation with another one of my old friends, Laura, this went on for over an hour and we just reminisced together over old times and traveled down memory lane. It was actually the best timing too because I was having a rough day. It’s crazy how reaffirming connections and your relationships with others can re-instill your feeling of purpose and love in your life! If you’re ever having a rough day just give an old friend, new friend, family member a call! It will make a HUGE difference.

  • Free stuff!

I am the Queen of free things. I love free stuff. But I especially love free things that actually will bring purpose into my life. My work team had a community showcase over the weekend where I was able to collect multiple wellness tools that I will use! I’m talkin water bottles, snacks, vegan soap, new agenda, and there were also a number of free draws to enter! Fun stuff!

  • The fact that the PUMPKIN SPICE LATTE IS BACK! 🙂

  • Cauliflower crust pizza recipe

Pizza in general is amazing, we all know that. But putting a healthy spin on it is always good and makes us feel better about the indulgence. I found this recipe which actually wasn’t too difficult and turned out so deliciously! The hardest part I found was actually grating the cauliflower. If you have a good blender (which unfortunately I don’t) it would make it much easier I’m sure!

Ingredients:
1 cup raw, grated (or chopped in food processor) cauliflower*
1 egg
1 cup mozzarella cheese
1 tsp oregano
2 tsp parsley
(may add other Italian spices as desired–such as dried or fresh basil)
Any other desired toppings

Directions

Makes 4, 1-slice servings. Can be doubled for a larger pizza

Preheat oven to 450 degrees.

Spray a cookie sheet with non-stick spray or use parchment paper. (Optional: Use coconut oil and sprinkle with Parmesan cheese before laying dough onto baking surface. Increases calories but I like health benefits of coconut oil. Some in this forum may not appreciate using this oil.)

In a medium bowl, combine cauliflower, egg, mozzarella and all desired spices. Press evenly on baking pan or pizza stone.

Bake at 450 degrees for 12-15 minutes (up to 20 minutes if you double the recipe). You may turn over once if desired.

Remove the pan from the oven. To the crust, add sauce, then toppings and cheese. (Get creative and top with chopped apples and cheese or your own combinations of whatever you like on a pizza. Some examples to choose from are jack cheese, onion, fresh or dried tomatoes, artichokes, shredded/cooked chicken, turkey pepperoni, pineapple, mushrooms, marinara sauce, bell peppers, whatever peppers you like, fresh mushrooms, fresh basil…your imagination is the limit.)

Place under broiler, on high heat, until cheese is melted.

Reheats nicely and can still be held in the hand, even the next day. (If you don’t press “dough” too thin, make small rounds and add enough egg to hold together.)

Pizza crusts can be frozen after the initial baking and used later.

*If using frozen cauliflower, prepare according to package directions. After cooked and slightly cooled, shred cauliflower with a cheese grater, (or grater blade on food processor) and then measure for the recipe. (An “unpacked/loose” cup.) Be sure to drain WELL.

Guestimate~Approximately 2 1/4 cups of 1″ cauliflower would grate into one cup of grated (or riced) cauliflower.

For lower calories, substitute two egg whites for whole egg and low or no fat mozzarella cheese.

Don’t spread this too thin or it will fall apart; if it’s too thick, it’s doughy in the middle.
