sooo, let me begin with something that happened today. Something not good to say the least…

At lunch time today, Colt and I usually share the house together as we have the same lunch hour at work. Today, however, he was doing volunteer work for habitat for humanity so I knew he wouldn’t be home.

Well, just my luck, that I happen to walk in the door and what do I see?

DISASTER ZONE.

Looks like the dogs got into the sink, grabbed the chicken carcass from our roast last night, got into the garbage, even into the coffee grinds. Oh, and also destroyed the back of our futon in the living room!

Needless to say, they were in their crates for the afternoon. Mama was not happy one bit..

Upon return at the end of the day, I let them out and I had to give me some good cuddles because they were staring at me so adorably..

Ah I am such a suck!

Now that you’ve been informed of the events of my day, I’d like to share a workout that I enjoyed this morning!

I was looking to change it up by utilizing some new forms of weights. This is always exciting to me. I love the feeling of some muscles being activated that haven’t been for a while and this workout definitely allowed for that!

While I’m talking about workouts, I may as well also update you on my running excursions!

I got out for a good 11 km yesterday morning. The pace was an easy one but so enjoyable. It’s really been benefiting me getting out in the mornings because the winds haven’t picked up yet. Darn that wind makes it a lot more difficult!

Weekend highlights

Afternoon to ya’ll!

I hope everyone’s weekends were splendid. Mine just about went by in a flash and before I knew it I was back to work, this morning.

I was hoping so badly to go run outside before starting my day but the wind was crazy. I’m talking howling crazy! So instead I resorted to the gym. I got in 35 minutes of cardio on the elliptical and a good tabata workout with the trusty NTC app:

  

  

Going back in time a little bit, this weekend was so very relaxed which I totally enjoyed. The weather was sunny and we took advantage of it completely.

Here are some highlights:

 Sangria outback

(forgive me for my nails, eek!)

 

Warm weather calls for obbligatory sangria (in my world!) My favourite go-to recipe when I have little on hand is this one:

Mix 4 oz. vodka of choice, 2 cups of white penguin wine (or white of your choice), 2 cups of club soda mix, squeezed lemon and frozen mango fruit mix

As you can see, it’s so generic and that’s the beauty of sangria! You can make it in any way you like 🙂

They love the sun even more than I do!! If they could just bask in the sunlight all day, they would be all over it.

Is there anything better? Maybe.  But this is one of my most beloved activities! Especially when getting to explore some new spots. Check it out- is that ice breaking up?? YAY

Colt snapped this picture when we all somehow managed to squish on our little couch together. This picture does not justify how hilarious it was, especially since Tanner (who is barely in the picture) is SO, so big and was trying so hard to be a part of it!

Things I’m Loving Friday {21}

Another week has come and gone! I feel like before I know it the school year will be over and I’ll be sayin‘ he-llooooo summer vacation! Although I probably shouldn’t get too ahead of myself. I’m looking forward to getting out this weekend for a BBQ and going away party for our friends moving to New Zealand!

 I am a fan of all things that have double-duty and can be used for more than just one singular thing. If you’ve not seen this video on how to turn your regular daily scarves into cute vests then take a look! It’s great for transition into spring clothing and I have an incredible number of scarves so I am sure I will be using this technique more than once.

I picked these up at the local Shoppers and my oh my! They’re so yummy and hit my sweet tooth perfectly.

 With the temperatures rising, I felt the desire to run to the beach and check it out this week. The views did not let me down and it’s so worth it to make the long trip there to snap some pictures. Even though it’s still partially frozen! I Cant wait to be able to jump in there – HA! A little early to be thinking that… 

Workout of the week – body burner

 Sister visit 

   

 

 Do these ever get old? No. But I had to post it because my favourite (& only) sister came to town with her new puppy Willow! It was outrageous having three hyper dogs in our home and so very entertaining. We also got out and enjoyed a brunch at a local restaurant. Deeeelish.

World Health Day

In honour of World Health Day, I wanted to talk about our favourite ways to maintain a healthy lifestyle!

This morning I managed to do MY favourite thing to take care of myself: RUN

Then what did I choose to do next?…..

EAT. I made a healthy breakfast of a veggie omelette with whole wheat toast on the side. It was interesting because I typically crave sweet for breakfast (like my pb and banana or coco oatmeal or pancakes..) but today it was savoury! It was not a let down either.

On my schedule for the rest of the day – grocery shopping, yoga and catching up with a girlfriend who just came back from Costa Rica!

Serial runner

Oh hello!

I don’t know what’s gotten into me.. Perhaps it was the long weekend or perhaps it’s the amazing weather but I have not been able to stop RUNNING!

The only complaint I have today was that it was super windy, like super super windy! My pace was sooo slow for me, 9.6 km/hr. But never the less, I still enjoyed it and felt great after.

One reason the time has seemed to be flying by when I have gotten out for runs is because I have been obsessing over the podcast series, Serial.

It’s about a high school senior who is murdered in Baltimore and her boyfriend is accused and convicted. It really gets me because it’s a real TRUE story and you’re actually following the narrator along with her investigation. If you go on the podcast website there’s even evidence and pictures to help you visualize the story. I can’t get enough!!!!

Oh, before leaving this little dork was staring me in the face looking sad, so naturally I had to bring her along and she loved all 11 km’s (she is a tank!)

On the topic of my fur babies, they loved Their Easter treats.

I walked into pet planet and could not resist those cute little bunny treats!!

More exciting news, I found a new favourite drink this weekend!! My girlfriend Inka and I had dinner and drinks and a movie date and I was feelin like something different than my typical red wine.. Me mikes had a new item called blueberry some thing or other with soda water and lemon and lime and it was absolutely delish.

Know what else I’ll be consuming again? The yummy pumpkin pancakes I had this morning. They ended up looking like nastiness but tasting so, so good.

And now it’s time to get back to my spring cleaning!

What’s a workout without apple crumble afterward?

Should we jump right into it? Today’s workout was a strength & cardio circuit. I warmed up with 15 minutes on treadmill and finished up afterward with another 20 minutes of cardio – combination of treadmill, stair master and elliptical because of boredom!

You can even alter the form of cardio or take it out completely in order to just focus on strength – whatever works best for you!

I felt so, so hungry after my workout today. And since I had daydreams about apple pie and goodies all day I thought a (healthy) version of apple crumble would be a treat that would satisfy my sweet craving.

Apple crisp is already healthier than pie as it cuts out the calorie-heavy crust. I also opted to use stevia instead of sugar, as well as subtract the brown sugar coating and really up the anty on cinnamon and oat topping. Taking the butter out of the equation also allows you indulge guilt-free!

(single serving)

You will need

  • 1 medium-sized apple, diced small
  • 1/8 tsp salt
  • 2 tbsp milk of choice
  • 1/2 tsp apple pie spice (or sub cinnamon)
  • 1 stevia packet
  • optional add-ins: walnuts, raisins, etc.
  • 3 tbsp quick oats
  • 2 tsp oat flour (or another flour of choice)
  • 1 tbsp oil or butter-type spread (such as Smart Balance Light or Earth Balance)

Instructions

– Preheat oven to 350 F and grease an oven-safe 2-cup dish.

– In a small mixing bowl, combine first five ingredients (and optional add-ins, if desired). Stir well.

– In a separate mixing bowl, combine remaining three ingredients and stir well. Now mix everything together and pour into the greased dish. (If you like a more-crumbly crumble, increase the amounts of the last three ingredients.)

– Bake 40 minutes (in the middle of the oven, not the very top), then turn the oven to high-broil for 2-3 minutes. Turn off heat, but let sit in oven 15 more minutes

Get ready to have a very satisfied tummy!

Wild Weather Wednesday

This mornings weather was not the epitome of ideal running conditions… Snow showers. What a terrible combination! I almost thought the forecast yesterday was just going to be one big April Fools joke. Just call it wild weather Wednesday.

Where I decided to take on the elliptical and took advantage of the time to read a few pages of my newest book!

For those of you who like to read, the first novel of this series is called the Rosie project. It was a very easy and adorable read (think great plane book!) and so far, the Rosie effect has not let me down, I’m totally into it!

I continued on the elliptical for about 30 minutes where I then moved onto some strength work.

Today was a concentration on upper body and core. Although I finished up with a minute squat challenge because why not 🙂

I got home and was more then ready for some breakfast. Another mish mash meal for me!

And then my day at work basically consisted of a TON of meetings. Man oh man I hate sitting all day long! Time to go for a walk with the pups, I’m out!

Easy BBQ Chicken & Reesey Piecey Goodness

Chicken is the number one go-to meal for dinner in our house! I especially love it because it’s so darn versatile and can be made in so many different ways.

Last night for dinner when we were trying to think of what to conjour up for a meal, we turned to the chicken thighs that were in the fridge and asparagus. I also had an intense craving for bruschetta, so I quickly ran to the store to get some fresh french baguette!

This chicken was easy peasy (as long as you know how to work a BBQ grill – if not, take some lessons!!) Seriously a life changing tool when it comes to cooking.

Ingredients:

skinless boneless chicken thighs
Sweet Baby Ray’s BBQ sauce
Salt & Pepper
Soy sauce

Directions:

– Marinade the thighs in soy sauce, salt and pepper for as much time as you can. We were trying to cook these up quick time, so they were only  in the bag for about half an hour.
– Fire up the BBQ to a temperature of around 400. Once it reaches this temperature, put the thighs directly on the grill and brush with BBQ sauce.- After 7 minutes, turn onto the other side of the thighs and brush this side as well.
-After another 7 minutes, the thighs should be cooked through (but cut one in the middle just to be sure).

Enjoy the chickeny chicken!

And for dessert… I must share this recipe. I’m sorry in advance.

Colt saw this posted on Facebook off of someone’s Pinterest account and when he said Reese’s I was immediately convinced to get baking.

WARNING: These are no way shape or form healthy. If you want to resist the temptation, don’t read any further 😉

Reeses Pieces Rice Krispies!

Ingredients:

7 cups mini marshmallows
7 Tablespoons butter, divided
1/2 cup peanut butter
7 cups plain Rice Krispie cereal
24 Reese’s Peanut Butter Cups, unwrapped
1 1/2 cups chocolate chips

Directions:

  • Melt 4 Tablespoons butter over low heat in a saucepan. Add the marshmallows and stir until completely melted. Stir in the peanut butter.
  • Pour the cereal into the marshmallow mixture and stir until completely combined. Press half the cereal mixture into a buttered 9×13 pan.
  • Place the 24 peanut butter cups over the top of the rice krispies in the pan. Spoon the rest of the rice krispies over the top and press down. Let cool completely.
  • Place the chocolate chips and remaining 3 Tablespoons of butter in a microwave safe bowl. Heat for 1 minute. Stir until creamy. You can heat it an additional 10-15 extra seconds, if needed. Spread over the top of the rice krispie treats. Let set. Cut into 24 squares. Store in a sealed container on the counter

Life recap

It’s been a while since I’ve been in touch, 6 whole days, what is this!? Well, forgive me. Life has caughten up to me this week and weekend at work and with family commitments. Nutrition month has consisted of exuberant amounts of planning, travelling and facilitating of presentations. PLUS I’ll actually be presenting on mental health and wellness to faculty at a college next week, too! It’s exciting and nerve-wrecking all at once. But again, a lot of my time has been put into that one!

Energy bites at school were DE-licious. We had to make these babies with soy butter instead, being in a school and all, but they were actually still a lot better than I thought they would be! The kiddies gobbled every last one up no problem.

RECIPE:

1 cup natural peanut butter
1/4 cup organic honey
1/4 cup coconut
3 Tablespoons of chia seeds
1/3 cup dark chocolate chips
1 cup oats (of choice)
1 Tablespoon cinnamon

– It’s as easy as stirring them all up in  a bowl, squishing some together to form balls, then placing them on parchment paper and into the fridge to chill for 2-4 hours (or as long as you’d like).

RUN:
I did manage to keep on running schedule these past few days. No matter how busy I tend to get in my days I ALWAYS need to make time for my fitness. This is pretty much what keeps me sane. I’m sure that many of you health nuts know what I’m talking about – you just feel off all day without that movement break.

It felt great to enjoy the day outside yesterday. I haven’t ran in the rain in a while, and was a little nervous before getting outside. In the end, it felt so refreshing! Even a little liberating, like I was a superhero!

Typical Tuesday

Running updates for you:

Yesterday, I wanted so badly to get up before work and head out the door for a run, but the roads were covered in snow. I was so sad when I looked out the window and instead had to defer my running to the treadmill. Treadmills just are not the same!

I still managed to get in a good 5 miles (which is just right according to my intermediate half marathon training schedule), so not all was lost!

EATS:

I arrived back home just in time to pack myself a quick breakfast to take on the go.

There’s some mushy looking grapefruit, plain Greek yogurt, some almond granola and a dash of cinnamon 🙂

And a spoon full of this good stuff, can’t get enough!

Crunchy peanut butter was 65% off at the grocery store!!! How can anyone say no to that deal?

Peanut butter is pure happiness in a jar.

On another note, I saw this cool activity posted on Costa Rica’s Peace Retreat’s Instagram account. I am putting this on my bucket list. I am planning on doing that this summer!
